It’s that time of the year again. The elderflower is ready to pick. Why not make some elderflower cordial?
Pick the flowers and shake off small insects.
Remove stems, rinse, and place in a saucepan full of water, to one litre.
Add 2 tablespoons of sugar.
Bring to the boil by cooking on a low heat.
Cool and place in the fridge overnight.
Add the juice of one lemon.
Pour into a litre of sparkling or still water, from which you have already decanted almost a pint of water. Any small flies you missed will be sitting at the bottom of the jug, so you can throw these out.
