How to make elderflower cordial

It’s that time of the year again. The elderflower is ready to pick. Why not make some elderflower cordial?

Remove stems and place in a saucepan with a pint of water

Add two spoons of sugar and gently bring to the boil. Cool and add lemon juice. Chill.
Pour away a pint of water and add to the remaining sparkling water

Method:

Pick the flowers and shake off small insects.

Remove stems, rinse, and place in a saucepan full of water, to one litre.

Add 2 tablespoons of sugar.

Bring to the boil by cooking on a low heat.

Cool and place in the fridge overnight.

Add the juice of one lemon.

Pour into a litre of sparkling or still water, from which you have already decanted almost a pint of water. Any small flies you missed will be sitting at the bottom of the jug, so you can throw these out.

Chill.
